It's the barmen at Arcaffè who make us the leaders in the field as far as professional, service-orientated espresso bars go. To meet our commitment of serving the perfect cup of coffee every day, and in recognition of the fact that when all is said and done it is the barman's creativity at work, Arcaffè established an unusually careful selection and training procedure for coffee-bar professionals. We invest heavily in attracting the best people, in training them properly and then ensuring that they remain with the Company. All our employees, including barmen, supervisors and branch managers, enjoy a range of advancement possibilities.
Outstanding employees with true managerial potential may also be offered the chance to join our study and training program to become future Arcaffè managers. The program is also for those with retailing experience, as well as for barmen who wish to advance, to gain significant managerial experience and to widen their involvement and responsibility within the Company. The following is the personal advancement track we offer both men and women.
Acceptance Our "baristas" (Italian for "barman specializing in preparing espresso") must know everything about each step of coffee preparation, and be able to demonstrate close attention to details while working. Arcaffè barmen specialize to become coffee professionals by undergoing a carefully controlled and structured training program. During the program, the barmen learn to love the "coffee scene" and to understand that preparing coffee is indeed an art.
During the first month, you will be absorbed into the Company and become acquainted with it. During this time you'll become familiar with basic service principles, especially how to identify and characterize the needs of our customers at the branches. To make you absorption passage smooth, you'll be guided by a trainer whose task it is to teach you the basics. After the initial period, you'll participate in the barman's course at Arcaffè's "Coffee University". The course provide you with the practical training and tools to operate the bar and to serve customers. It is a professional course, our most basic but important one, and has been developed utilizing Arcaffè's experience and professional and commercial knowledge.
Qualified barman Once you've successfully completed the course you'll return to the branch, where you'll learn about the Company's expectations, before you are fully qualified. The person in charge of training at the branch will prepare you to become a "Qualified Barman". The final qualification is divided into two stages: The first stage involves learning the theoretical material concerning not only the various bar stations, but also the specialization (coffee, kitchen, cakes-cookies-pastries, presentation etc). The second stage (on the job training) is then actually applying the theoretical studies, on-site at the various bar stations. This is under close supervision and guidance of the branch managers. After the training period, you'll be examined on everything. Your examination success will be rewarded by a "graduation certificate" as barman, and a salary increase. Once you have your certificate you'll have a meeting with the branch manager, who will explain the Company's expectations and the advancement opportunities for you personally.
Bar Supervisor Arcaffè firmly believes in the process of internal task mobility, which allows every employee to prove his worth and capabilities and to so advance within the Company. Barmen who demonstrate managerial ability, leadership qualities, high standards of attention division and powers of coordination, professional standards and excellent human relations, tidiness and cleanliness; will be the natural candidates to climb high on the job ladder. The position of bar supervisor is the initial managerial level offered to outstanding qualified barmen. The bar supervisor manages the bar staff, but always giving the customers top priority and ensuring that their orders reach them faultlessly. The supervisor must ensure a pleasant working atmosphere, teamwork, cooperation and getting the most from the employees. The supervisor oversees all the bar work, and checks that the displays of products to ensure that the bar is perfectly presentable at all times.
Duty Manager Exceptionally good bar managers, who are found to be suitable, are promoted to duty managers. They undergo a 6-day course, learning all there is to know about the branch kitchen and Arcaffè's production factory. They will also learn more about baking, as well as coffee roasting. Besides theoretical learning, potential duty managers will have various courses in computers, maintenance and Company regulations, all of which will enable them to fulfill the duties for which they are responsible.
Deputy Branch Manager Candidates for the position of deputy branch manager must have high standards of managerial capacity as well as outstanding leadership qualities. Beyond that, and as an offshoot of their responsibilities, they must have a basic knowledge of OFFICE and pc's, and must be able to accept personal responsibility. The deputy manager must be thorough and able to go into details, reliable and unremitting in his duties, have initiative and creativity, be open to criticism and able to learn and improve. Parts of his duties are to train other employees and managers at the branch, and not to hesitate to invest the required energy in doing so. Finally, he must have a service-oriented personality.
Branch Manager Our branch managers are responsible for the ongoing operation of the branches, emphasizing the highest possible standards of customer service and uncompromising quality standards in accordance with the Company's procedures. The manager is also responsible for the branch's financial dealings, human resources, dealing with suppliers, service and customer relations. He also assigns various positions at the branch. The manager is the link between management persons at the Company's offices, and the branch employees. He must encourage innovation and initiative at the branch, advance Company policy and assimilate and entrench its organizational strategy at the branch. In addition, the branch manager must be a true leader, mature and morally strong, ambitious, achievement-orientated and above all honest and direct.
